I met Ioana and Mirela to tell me about the cheesecake and the wedding cake, for a hot tea, convinced that it is not just a banal business meeting. I recognized Mirela from this winter, when she worked in an event room I collaborated with. When he called me to tell me he was busy with a new project, I was very happy and, after a «healthy» referral, we managed to get not two, but three girls to agree.
Ioana is a warm and energetic presence. I had the impression that I had known her for a long time and I couldn’t get rid of this idea until the end of our meeting. It’s easy to make you feel at ease, even when you tell her you don’t know exactly what projects to include. Overall, this is the biggest problem I’ve faced lately. I know a lot of people, most of them are amazing at what I do, but I don’t have (and wasn’t planning on having) that many events that would allow me to use them all.
However, I know that cheesecake replacing the wedding cake is a great idea. Because the cake wrapped in sugar paste is hard, and by itself, and in a figurative sense. Because it is usually accompanied by other sugar paste decorations which, even if they make it look a certain way, do not awaken any papillary joy in us. Because the classic cake is cut hard and uneven. And because I’ve been waiting for an alternative for a long time, other than Pavlova. The cheesecake is to my taste. An easy, 100% edible cake that manages to maintain the shape of a cake even after being cut.

History of the cheesecake
Before reaching New York in search of perfection, cheesecake was served to athletes at the first Olympics in ancient Greece. Then around 1000 it arrived in Western Europe, Italy and England. Thanks to immigrants, at the end of the 19th century, New York enjoyed this delicious dessert.
Since then the cheesecake has undergone many changes, even coming to «wear» the festive wedding dress or other important events in our life.

Cheesecake is a very inspired alternative to the wedding cake for newlyweds who desire: a creamy and light texture, a mix of flavours, a natural covering and a cake to be eaten whole. Although this dessert may seem limited, it is possible to associate it with a variety of flavors and natural decorations, which place it on the same level as any other traditional dessert.
While often «simple is best», cheesecakes don’t have to be plain, there are dozens of delicious and varied toppings.
Cheesecake decoration
Since cheesecakes are not covered in icing or marzipan, like traditional cakes, decorating them requires more creativity and innovation.
Here are some fantastic ideas for decorating the wedding dessert in the form of a cheesecake:
